An exceptional dish made of goose foie gras, truffle and a thin layer of veal stuffing, inspired by the recipe created in 1778 by Jean-Pierre Clause, chef to Marshal de Contades.
True to his commitment to support local artisans, Thierry Schwartz has reimagined this classic gourmet Alsace recipe, working exclusively with regional goose foie gras sourced from one of the few remaining local producers, Ferme Lechner.
